EWA Sausage & Veggie Sheet Pan Supper
 

Sheet Pan Sausage & Veggie Bake

Ingredients

  • 4 fully cooked chicken sausage, cut into chunks 

  • 1/2 red bell pepper, cut into 1 inch pieces

  • 1/2 yellow bell pepper, cut into 1 inch pieces

  • 1/2 yellow onion, cut into 1 inch pieces

  • 1 broccoli crown, chopped into small florets

  • 1 large potato, diced into 1/2 inch cubes

  • 4 ounces Brussels sprouts, quartered

  • 2 carrots cut into inch coins

  • 2 tablespoons avocado oil or olive oil

  • 1 tablespoon salt free Italian seasoning blend 

  • 1/2 tablespoon minced garlic

  • 1 teaspoon kosher salt

(Cut veggies small and all the same size so they cook evenly)

Directions

  1. Preheat oven to 400 degrees. 

  2. Combine all ingredients in a large bowl and stir well.  Pour onto a large baking sheet and spread into one layer.

  3. Cover with tin foil and cook for 20 min.

  4. At the 20 min mark, remove tinfoil and cook for 10 more min.
