Radish Hash

(Serve with Poached or Fried Eggs)

Ingredients

  • 1 lb of bacon

  • 1 yellow onion diced

  • 2 bunches of radishes diced 

  • 1 bunch of bok choy, swiss chard, or spinach cut into bite size pieces

  • 1 sprig of rosemary, finely chopped

  • salt & pepper

  • 4 eggs, poached or fried

Instructions:

  1. Preheat oven to 400, place all bacon except 2 pieces on baking sheet with a rack. Using the rack allows the bacon fat to drip into pan. 

  2. Cook the bacon the bacon until crisp. Remove from oven and set aside to cool.

  3. In a large skillet cook the 2 pieces of bacon until crisp, remove from pan, and set aside to cool.

  4. Add diced onions to the bacon grease in the skillet and cook until golden brown. Sprinkle with salt. 

  5. Add radishes, salt, pepper and rosemary. Cover with lid and let cook for 7 min.

  6. Test to see if radishes are soft, if not cook for another min or 2.

  7. Give the radishes a stir and add greens. Cover for 2 min or until the greens are wilted. Taste, and add salt and pepper if necessary. Turn off the heat

  8. Crumble the bacon and add to the hash, combine all ingredients.

  9. Serve as the base to your poached or fried eggs.
