PESTO SALAD

This salad reminds me of a summer bbq. It’s simple, has tons of flavor, and is great as a stand-alone meal or side dish.  Spinach, tomatoes, and avocados are packed with fiber, vitamin C, and B vitamins. According to the Mayo Clinic, eating foods high in fiber can aid in lowering cholesterol levels, maintaining blood sugar levels, as well as maintaining healthy body weight. Vitamin C has been shown to boost immune function and vitamin B is a great energy booster.

I make this salad for lunch and dinner, it’s great with grilled salmon or chicken. 

 

Pesto Salad

  • 4c. baby spinach

  • 1c. cherry tomatoes cut in half

  • ½ cucumber cut into cubes

  • 1 avocado cut into cubes

  • ½ c. feta cheese ( you can use crumbles but I like to cute cubes from a block of feta)

  • ¼ c. sunflower seeds

  • salt & pepper

In a large bowl toss the spinach with 1tsp. of olive oil, 1tsp of lemon juice and a pinch of salt. Toss gently.  Add tomato, cucumber, avocado, feta, and sunflower seeds. Sprinkle with a pinch of pepper.

 

Dressing

  • 1tsp olive oil

  • 4tbsp pesto*

  • 1tbsp olive oil

  • 1/2 of a lemon juiced

You can make your own pesto or use store-bought. I like Bear Pond Farm Premium Basil Pesto, it can be found in the refrigerator section of the grocery store. 

In a small bowl measure out pesto, 1tbsp. olive oil, 1tbsp of lemon juice. Stir until all ingredients are combined. You can add more lemon juice for a thinner dressing if you would like. Drizzle over salad. Serve!
