BROCCOLI & CAULIFLOWER SOUP

  • 1 bag of Frozen Organic Broccoli or Cauliflower

  • 2 cups of bone broth or vegetable stock

  • 1/4 cup of raw organic cashews

  • salt & pepper

  • Add a drizzle of truffle oil, it really adds a nice touch!

Turn burner to medium heat. In a large sauté pan, add 2 cups of stock and the bag of broccoli. Cover and let cook through, about 7-10 min. Add contents to blender (you may need to do this in stages if your blender is small or not equipped to handle hot liquids). Add cashews, salt, & pepper. Puree until smooth. If you would like thinner soup add more broth. Taste and add more salt or pepper if necessary.
