Cabbage cacio e pepe
2 tablespoons of butter
4 cups of thinly sliced cabbage
1/2 lb of organic bacon cooked and crumbled
1/2 a cup of vegan parmesan cheese (recipe below)
salt
pepper
red pepper flakes
In a large skillet or wok melt the butter over medium heat. Add cabbage and toss in skillet. Add salt, about a teaspoon or a couple of pinches and toss. Add in vegan cheese and blend. Add black pepper and red pepper flakes, toss. Add in crumbled bacon and combine. Taste, add in more salt or pepper if necessary. Enjoy!
Vegan Parmesan (recipe by @minimalistbaker )
3/4 cup of cashews
3 tbsp nutritional yeast
3/4 tsp salt
1/4 tsp garlic powder
Put all items in Cuisinart and blend until it becomes a fine powder.
