  • 1 bunches of Dinosaur Kale, stemmed and chopped

  • 1.5tbs olive oil

  • 1 lemon juiced

  • 1/4tsp garlic powder

  • 1tsp salt (to taste)

  • 1tsp pepper (to taste)

  • 1tsp red pepper flakes (to taste)

  • 1/2c vegan parmesan cheese (recipe below) 

In a bowl rub-down, the chopped kale leaves with olive oil until every piece is coated and the stiffness is gone.  Drizzle lemon juice and mix.  Sprinkle with garlic powder, salt, pepper, red pepper, & cheese. Toss until all leaves are coated and the ingredients are well blended. This is a great made ahead of time. I find the salad tastes just as good if not better the next day. Enjoy!
